2015 Chardonnay

Phillip Stanley Range

2015 Chardonnay

Complex | Rich | Fine

TASTING NOTES A beautifully complex Chardonnay, rich with stone fruit, crème brulee and integrated oak spice. Fine, structural tannins and a fresh acidity ensure flavours linger.

WINEMAKING The 2015 Chardonnay fruit was handpicked in pristine condition. The fruit was chilled and whole bunch pressed to allow gentle pressing. The juice was transferred directly into French oak barrels and temperature controlled to ensure a slow fermentation process with natural (wild) yeasts. This allowed for the development of complex flavours and textural weight.

FOOD PAIRING Pan roasted Chicken breast with a hazelnut gremolata crust served with baby rocket.  The crusted chicken gives this well-structured chardonnay an extra dimension showing respect to its vibrant natural acidity.

VINTAGE NOTES The 2015 vintage started with a cold, windy Spring which resulted in losses during flowering with subsequent yields being quite low. Summer temperatures were consistently warm, resulting in well-balanced flavours across all varieties. The white grapes ripened with intense flavours and vibrant aromatics, retaining natural acidity. Ripening of the red fruit slowed with cooler weather and some rain early April, however grapes still achieved great flavour and tannin ripeness with intense colour.

2017 Cabernet Sauvignon

Phillip Stanley Range

2017 Cabernet Sauvignon

Superb | Dark | Brooding

TASTING NOTES Dark red with a brick hue. A brooding Cabernet Sauvignon with an abundance of mulberries, black currant and savoury spice. Dark chocolate, dried herbal nuances and fine structural tannins combine seamlessly to create this superb wine.

WINEMAKING Grapes were picked at optimal ripeness, crushed into stainless steel fermenters for alcoholic fermentation. The wine was matured with French oak for 18 months. Each barrel of Cabernet was tasted, and the best barrels were selected and blended to create this wine. It was minimally fined and gently filtered before bottling.

FOOD PAIRING A traditional lamb roast with a good sprinkling of rosemary.

VINTAGE NOTES A late, wet and cold winter saw higher ground water reserves, followed by a late and truncated spring. Summer was mild with perfect conditions during flowering setting up higher yield expectations. Rain in early February and late March provided challenges but good ripening conditions thereafter finished off what turned out to be an exceptional vintage. The late vintage provided good colour extraction and fully developed flavours at lower alcohol levels.
